Here’s One I Baked Earlier – Jaffa Cakes Cupcakes

I am on a Cupcake Mission at the moment… to create the perfect Jaffa Cake Cupcake and here is attempt number 1:

The icing was a little runny so more essence and less juice but the cakes themselves were a night balance between chocolate and Orange…

So here is the recipe:

  • 150g Self Raising Flour
  • 30g Cocoa Powder
  • 125g Soft Butter
  • 175g Caster Sugar
  • 2 large eggs
  • 1tespoon of vanilla extract
  • Juice of 1.5 large oranges

For the Icing

  • 500g Icing Sugar
  • 110g Very Soft Butter
  • 1 teaspoon of Orange Extract
  • Juice of 1 Orange
  • Splash of Orange Food Colouring
  • Chocolate Sprinkles for Covering

And here’s how…

  1. Pre-heat the oven to 170 oC and line 12 cupcakes cases
  2. Cream the sugar and butter with a wooden spoon for 5 minutes and 5 minutes with electric mixer
  3. Add the eggs one at a time and mix for at least 2 minutes between eggs.
  4. Add the orange juice and vanilla extract and mix for a further minute
  5. Sift and double sift the flour and cocoa and fold into the cream mixture with a wooden spoon
  6. fill the cupcakes case 2/3 full and make in the middle of the oven for 15 – 17 minutes until a wooden cocktail stick comes out clean
  7. Leave in the tray for 5 minutes before turning out to cool completely
  8. For the icing – cream together the icing sugar and butter until it looks like coarse sand… this can take up to 10 minutes and it is best to start with a wooden spoon until all the sugar is incorporated and then swap to a electric whisk
  9. Add the liquid and mix into a thick paste… then pop into the fridge, for about 30 minutes – bringing it out to mix every 10 minutes.
  10. Once the cakes are completely cool and the icing thick and gooey… smear the icing on the cakes and sprinkle your sprinkles and leave to cool…
